Beer Shelf Life Analysis by EPR Spectroscopy
All beers have a certain amount of naturally occurring antioxidants that protect their flavor by terminating destructive oxidative free radical reactions. Beers with higher “antioxidant activity” can resist oxidation for longer periods and thus, have better shelf life stability. Oxidation is minimized in the brewery by optimizing the raw material usage, processing methods, storage and transport conditions to provide maximum antioxidant content in the final packaged beer when it gets to the consumer.
