Today’s global consumers demand more transparency than ever before. They want to trust the origin and integrity of the food products they buy, and their need for trust extends from the farm to point of sale throughout the supply chain.
As the challenges of safeguarding the global food supply chains have increased and frauds become more sophisticated, new and more advanced fraud detection procedures are needed, including new analytical methods that can fill the existing gaps.
Automated high-resolution 1H-NMR spectroscopy, combined with multivariate statistical chemometrics, provides unique "all-in-one" capabilities for food authenticity control.
The 1H-NMR spectra reflect the fingerprinting of the tested food product and allow targeted quantification of specific marker components, as well as statistics-based fingerprinting for nontargeted detection of admixtures and determination of origin - all within the same experimental run.
The principles behind this NMR methodology as well as recent applications are presented.
