From Raw Milk to Dairy Products

For the analysis of raw milk, Bruker developed the MIRA - a pre-calibrated, high precision IR milk analyzer - for the needs of today’s dairy industry. The system offers a cost-effective way for the quality control of milk, whey, and cream.

If it is more than milk, Bruker’s MPA II FT-NIR analyzer can analyze any raw material, intermediate and final product along the production chain, including:

  • raw & standardized milk
  • liquid milk products, e. g. flavored milk drinks
  • whey & whey concentrate
  • condensed milk (also sweetened)
  • lactose & whey protein concentrate
  • milk & whey powders
  • cream & butter
  • yogurt & greek yogurt
  • ice cream & desserts
  • hard & soft cheese

Common parameters which can be determined in various dairy products include fat, protein, lactose and total solids. More specific parameters for milk include urea (MUN), nitrogen or freezing point depression. Bruker Optics comprehensive calibration packages for feed and ingredients are developed following the ISO 21543 guideline.

Liquid Sampling Module

Bruker offers in combination with the well-known MPA II spectrometer a software assisted analysis for raw milk and liquid milk products.

The Liquid Sampling Module (LSM) is dual use: It pumps and homogenizes raw milk samples, but can also bypass the homogenizer for other liquid sample types. In contrast to FT-IR milk analyzers it can handle dairy products with different viscosities from whey over ice cream premix to viscous concentrates or condensed milk. With its automated cleaning options, it is ideal for routine use in the dairy QC lab.

Process Control with FT-NIR Spectroscopy

Bruker Optics offers an ideal on-line and in-line solution for the quality control of any type of dairy product. The MATRIX-F can utilize different optical probes and measurement heads:

  • Transmission probes for clear liquids and whey
  • Transflection probes for any liquid from milk to high-solid content liquids
  • Measurement heads for contactless reflection measurements on any solid product, e.g. milk powder or cheese blocks
  • Reflection probes for solid and semi-solid products

Up to six measurement points in the process environment can be controlled sequentially with the built-in optical multiplexer. Any combination of probes can be used in one analyzer which is a critical advantage for processes that start with fluid milk, and end with semi-solid or solid products.
