Droplet size distributions (DSDs) play a major role in the development of new products, influencing mouth feel, stability of emulsions, and shelf life. This webinar will present the Droplet Size Analyzer 2.0, an improved software solution for DSDs in food emulsions using minispec, a Bruker TD-NMR system. The new solution introduces a new user interface, GoScan for minispec, and improved data analysis including the calculation of multimodal droplet size distributions.

Droplet size analysis is regularly applied in the production quality control and Research and Development (R&D), where the final goal is to ensure specific characteristics of food products.

Omeet has received Bachelor of Science degree in Biochemistry from University of Illinois at Chicago and holds a Master of Science degree in Chemistry from DePaul University. In 2013, Omeet joined Kraft Foods Group and now Kraft Heinz Company as Food Physics scientist in Analytical Sciences, where he studies physical properties of food emulsion using various analytical techniques.

Eduardo Nascimento holds a doctoral degree in Chemistry with experience in NMR-based metabolomics of biofluids and food. As a Research Associate, he worked on the development of analytical methods based on HPLC-SPE-NMR and matrix-assisted DOSY. He joined Bruker in 2013 and started work in 2021 as Product Manager for new solutions in TD-NMR focused on the Applied, Industrial, and Clinical Market.
