Fast and accurate determination of the droplet size distribution (DSD) in emulsions plays a fundamental role during development and quality control of consumer packaged goods such as mayonnaise, margarine and spreads. DSD directly influences not only rheological properties like texture and mouth feel, but also stability and shelf-life. This application note describes how the Bruker minispec Droplet Size Analyzer 2.0 uses the non-invasive time-domain nuclear magnetic resonance (TD-NMR) technique to provide accurate DSD results with minimum sample preparation and no sample dilution, in order to improve decision making and batch release processes and support new product development.
